Raw Buckwheat Coconut and Mango Pudding – Vegan

  • 1 cup buckwheat, soaked overnight
  • ½ cup coconut milk
  • 2 tsp raw agave nectar
  • 1 mango, peeled and cut in cubes
  • Mixed seeds and nuts


  1. Blend your buckwheat, coconut milk and agave nectar until it makes a smooth paste.
  2. Transfer to your bowls, topping with your mango, nuts and seeds.
  3. Either eat straight away or save for later – it will keep well if you need something to eat whilst you’re out and about.
