Vegan Caramelised Buckwheat Groat Fruit Crumble

This yummy, tangy and fruity crumble makes the perfect winter dessert!

INGREDIENTS

  • 1 cup raw buckwheat groats
  • 1 tablespoon coconut oil
  • 3 tablespoons coconut sugar
  • 3 apples, peeled and chopped
  • 300g frozen blackcurrants
  • 1 tablespoon brown sugar
  • 1 tsp cinnamon

DIRECTIONS:

  1. Soak your buckwheat groats overnight, they should become soft and plump
  2. Preheat your oven to 390F
  3. Drain your buckwheat groats and rinse them thoroughly until they lose their slimy texture.
  4. Pour the rinsed groats into a pan and sauté until the water is fully evaporated, which should take about five minutes
  5. Add in the coconut oil and coconut sugar and stir until fully combined. Cook for a further two minutes.
  6. Pour the coated buckwheat groats into a backing sheet and roast in the oven for 12 – 17 minutes.  When ready they’ll be a golden brown color.
  7. At the same time, mix your apples and blackcurrants with cinnamon and brown sugar. Spread into the bottom of a small oven dish and bake until they start to soften.
  8. Once the groats are fully cooked, spread them over the fruit mixture and return to the oven for another five minutes.
